What it is and why it matters

In coffee it is used to estimate TDS, the concentration of dissolved material in the drink. With dose, final beverage and TDS you can calculate approximate extraction yield.

It helps compare recipes, train the palate and control consistency. It does not replace tasting: two coffees with the same TDS can taste very different.
