Burr grinder

The grinder is the tool that changes daily cup quality the most. Even grinding makes extraction predictable; uneven grinding mixes sour, bitter and flat flavors in the same drink.

Definition

What it is and why it matters

A coffee grinder does not just break beans: it controls particle size and distribution. That distribution decides how much surface touches water and how quickly acids, sugars, bitters, oils and aromatic compounds extract.

Burrs are superior to blades because they cut or crush with an adjustable gap. Blades strike randomly and create fine dust and large chunks at the same time, making any precise recipe difficult.

Key parts

What you need to understand

01

Burrs

They can be flat or conical. Quality, alignment and adjustment matter more than shape alone.

02

Adjustment

Stepped is enough for filter; stepless or micro-adjustment helps a lot for espresso.

03

Motor and transmission

They should keep speed stable without overheating the coffee.

04

Retention

Coffee left inside the grinder. Low retention makes switching coffees and repeating doses easier.

Burr material

Ceramic or metal

A common grinder question is whether burrs should be ceramic or metal. Short answer: material matters, but less than burr design, alignment, grinder rigidity and adjustment precision.

Ceramic burrs

Pros
They do not rust, often conduct less heat and can last a long time in light home use.
Cons
They are more fragile with impacts or stones, can chip and in low ranges do not always cut very cleanly.
Best for
Simple hand grinders, occasional use and tight budgets where easy maintenance matters most.

Metal burrs

Pros
They usually cut more precisely, withstand heavy work better and dominate serious filter and espresso grinders.
Cons
They can rust with moisture, wear over time and need cleaning to avoid rancid oils.
Best for
Daily use, espresso, fine adjustment, cafes and any case where repeatability matters more than saving as much as possible.

Buying

Buying recommendations

If you brew filter

Buy a burr grinder with a good medium range, low retention and clear settings. Manual can be excellent if you brew few cups.

If you brew espresso

Prioritize micro-adjustment, stability, burrs suitable for fine grinding and comfortable portafilter workflow. A cheap grinder often limits more than the machine.

If you want one purchase

Look for real versatility, not just many marks on the dial. It should return to previous settings repeatably.

Avoid

Blade grinders, decorative dials without precision, huge hoppers for coffee that will oxidize and models that are hard to clean.

Maintenance

Use and maintenance

Regular cleaning

Remove old coffee and oils. A brush and periodic cleaning are enough for home use.

Do not force adjustment

For espresso, move finer while the grinder is running to avoid blockage.

Check burrs

They wear over the years. If you need to grind finer and finer for the same result, it may indicate wear.

Weigh the dose

Single dosing helps control retention and freshness.

Common mistakes

What to avoid

Buying blades

It is cheap, but makes learning extraction difficult.

Changing everything at once

Adjust grind before redesigning the recipe.

Ignoring cleaning

Rancid oils contaminate fresh coffees.

Using a non-espresso grinder

Not every fine grinder has enough adjustment for real espresso.
